I found this picture on the net...if you wanna examine my cooking skills and "presention" go back to December post and check out my Christmas dinner...e7im I cooked the turkey :P

Christina: hey sweetie, "machboos deyay" is basically chicken with rice (basmati rice)...we use a lot of mix spices to cook this dish..ok here is the recipe:
1 chicken, cut into pieces or I prefer kosher hen.
2 large onions, chopped.
2 cups long grain rice (basmati rice)
1 table spoon of mix spices (black pepper, paprika, coriander, cinnamon, cumin, cloves, ginger, cardamom)
1 teaspoon tumeric
1/2 teaspoon of dried lime(loomi)
5 cardamom pods
2 cloves
a few threads of saffron
1/4 cup of rosewater
salt

you can find the mix spices and the basmati rice in either Middle Eastern grocery store or at an Indian grocery store.

1- soak the saffron threads in the rosewater and leave aside.
2- heat oil in a deep saucepan and fry the onions until golden then add the spices, tumeric together with powdered loomi and fry for 1 minute.
3- add the washed, dried chicken pieces and brown on all sides.
4- add 2-3 cups of water together with salt, cloves and cardamom pods. reduce heat, cover and simmer gently for 45 minutes.
5- meanwhile clean, wash and soak the rice.
6- when the chicken is ready take it out of the saucepan and put into the oven until it's golden.
meanwhile add the drained rice to the chicken broth. leave it for about 30 minutes until the rice absorbed the liquid.
finally add the rosewater and saffron onto the rice.
we serve the chicken and rice and for the sauce we use tomato sauce which is basically 3 chopped tomatoes, 2 gloves of garlic, and small can of tomato paste with some salt and 1 cup of water, mix them all together in blender than heat it up in sauce pan.
you serve the tomato sauce (dagoos) on the side with the rice and chicken.
that's it I think...good luck in cooking "machboos deyay"

You read my mind,JB! Thank-you,Thank-you!:D

Christina: your welcome hon, I just it was clear enough
and let me know how it goes...bon appetit :)

Q8BL: thanks for the correction birthday girl :P

vintage: hani o 3afya :)
